Shouldn't it be "a man whom you take to be experienced"? "Whom" is the object of the verb "take"... I could be wrong. Just curious.

No, you're quite right, but I was on the fence about how formally to translate it, given that Kafka seems to have intended it as dialogue in a story. Three possibilities, increasingly colloquial:

a man whom you take to be experienced
a man who you take to be experienced
a man you take to be experienced

Perhaps the last one is actually best.
